Polish Marble Bunt Cake {Babka Marmurkowa}
Easter is right around the corner. It’s time to start prepping for this very important celebration (more about Easter soon). I’m starting with babka, a soft and crumbly cake, baked in a bunt cake pan, sprinkled with powdered sugar or glazed with chocolate frosting. I’m opting for vanilla-chocolate swirl (marble) this time.
You will need:
14 tbs of soft butter
1 cup of sugar
1 tsp of vanilla extract
2 cups of flour
4 eggs separated
6 tbs of milk
3 tsp of baking powder
4 tbs of cocoa
2 tbs of run, whiskey or cognac
Pinch of salt
Powdered sugar
1. Preheat oven to 375°F.
2. Blend soft butter and sugar until fluffy (3-4 min), add vanilla extract, mix until combined.
3. In a separate bowl combine flour, baking powder and a pinch of salt.
4. Alternately add egg yolks, flour and milk, and mix until combined.
5. In a separate bowl, beat egg whites with a pinch of salt on high until stiff. Transfer egg whites into cake mixture and gently stir by hand until combined.
6. Prep bunt cake by greasing it with butter. Transfer about ⅔ of the cake mixture into it. Add cocoa and rum to the remaining ⅓ of the cake mixture and stir until combined. Add to the pan and gently stir to create swirls.
7. Bake for about 50-60 minutes. Turn over off, crack open over doors and let cool. Take out after 15 minutes, cool. Sprinkle with powdered sugar.
